Ingredients
Flaky Pastry Pockets with Chicken
Instructions
Step 1
Start by turning your Instant Pot to the sauté setting. Once it’s hot, toss in the butter along with the chopped red and green bell peppers and onion. Cook everything until the veggies are nice and soft, about 5 minutes or so. While that’s happening, slice each chicken breast in half horizontally to make thinner pieces, then cut those into diagonal strips. Sprinkle the chicken with about 1 1/2 teaspoons of jerk seasoning and add it to the pot. Let it cook for around 5 minutes until the chicken starts to brown.
Step 2
Next, cancel the sauté function and stir in the penne pasta, water, whipping cream, and garlic base. Lock the lid in place and set the Instant Pot to high pressure for 15 minutes. It’ll take about 10 to 15 minutes to come up to pressure. When the cooking time is up, carefully quick-release the pressure following your Instant Pot’s instructions. Once it’s safe to open, remove the lid and stir in the rest of the jerk seasoning and the Parmesan cheese until everything is creamy and well combined. If you want it a bit saucier, feel free to add up to a quarter cup more cream. Give it a good stir and you’re ready to serve!
