Instructions

1

Step 1

Start by seasoning the inside of each quail with salt and pepper, then tuck a sage leaf inside. Wrap each bird with a slice of pancetta and secure it with a toothpick.

2

Step 2

Melt a tablespoon of butter in a saucepan over medium-high heat and brown the quail on all sides. Splash in some brandy, half of the beef stock, and half of the wine. Let it cook until most of the wine evaporates, about 5 to 7 minutes. Season with a little more salt and pepper, then transfer everything to a baking dish.

3

Step 3

Pop the dish into a preheated oven and roast the quail until they're cooked through and no longer pink in the center, around 12 minutes. Keep spooning the pan juices over the birds as they cook to keep them moist. When they’re done, take the baking dish out and pour the juices back into the saucepan. Add the quail back in, cover, and simmer gently over low heat, turning them every so often for about 6 minutes.

4

Step 4

While the quail finish cooking, melt half a tablespoon of butter in a heavy-bottomed pan over medium-high heat. Toss in the chopped onion and cook, stirring, until it starts to turn golden around the edges, about 2 minutes. Add the rice and stir it around until it’s well coated in butter and just starting to toast, which should take 2 to 3 minutes.

5

Step 5

Turn the heat down to medium and pour in the remaining wine. Let it bubble away until it’s mostly gone, then add a third of the remaining broth. Keep stirring the rice until it soaks up the liquid and turns creamy. Repeat this step two more times, adding broth a third at a time and stirring constantly, which will take about 15 to 20 minutes.

6

Step 6

Finally, stir in the remaining butter and half of the Parmigiano cheese to make the risotto rich and creamy. Serve each quail on a bed of the risotto, drizzle the edges with the pan juices, and sprinkle the rest of the Parmigiano over the top. Enjoy it while it’s nice and hot!

Serving Suggestions

Serve this dish with a simple mixed green salad dressed lightly with lemon and olive oil. A crisp white wine, such as Pinot Grigio, pairs wonderfully and balances the richness. Garnish with fresh parsley or grated Parmesan for an extra touch.

Storage Tips

Store leftovers in an airtight container in the refrigerator for up to two days. Reheat gently on the stove with a splash of broth to restore creaminess. Avoid freezing, as the texture of the risotto and quail may change.
