This flavorful dish combines tender chicken with warm Moroccan spices, all cooked quickly in the Instant Pot for a hassle-free meal. Perfect for busy weeknights when you want something delicious and comforting.
Ingredients
Chicken and Herb Patties
Instructions
Step 1
Start by tossing the chicken in a shallow dish with a tablespoon of olive oil and the Moroccan seasoning, making sure each piece is nicely coated. Heat up your Instant Pot® on the sauté setting, then add another tablespoon of olive oil along with some butter. Once the butter is melted and the pot is hot, brown the chicken for about 3 to 5 minutes on each side. When it’s nicely seared, take the chicken out and set it aside to keep warm.
Step 2
Next, add the chopped onion, carrot, and garlic to the pot. Cook them until they’re soft and fragrant, which should take around 5 minutes. Stir in the pearl couscous, broth, and chickpeas, mixing everything together well. Turn off the sauté function, then nestle the chicken back into the pot on top of the couscous mixture.
Step 3
Lock the lid in place and set your Instant Pot® to high pressure for 5 minutes. It will take about 10 to 15 minutes for the pressure to build before the timer starts. When the cooking time is up, carefully use the quick-release method to let out the steam.
Step 4
Once it’s safe to open, take off the lid and serve the chicken and couscous with a sprinkle of toasted almonds on top for a little crunch. Enjoy!
