Instructions

Step 1

Start by heating some oil in a large pot over medium-high heat. Toss in the potatoes, celery, carrots, and onion, and sauté them for about 2 to 3 minutes until they start to soften. Next, add the mushrooms and keep stirring for another 3 minutes or so, until the onion becomes translucent. Then, throw in the chard and garlic, season with salt and pepper, and cook until the chard wilts, which should take around 2 minutes.

Step 2

Pour in enough water to cover the veggies, add the bay leaves, and taste for salt. Bring everything up to a boil, then lower the heat and let it simmer gently for about 35 minutes. While the soup is simmering, cook the fusilli in a big pot of lightly salted boiling water until it’s tender but still firm, about 8 minutes. Drain and set aside.

Step 3

Once the soup has simmered, stir in the tofu, tamari, and bouillon. Let it cook for another 10 minutes or so until the bouillon has completely dissolved. When you’re ready to serve, add some of the cooked pasta to each bowl and ladle the hot soup over the top. Enjoy!
