Instructions
Step 1
Start by putting the shrimp in a large bowl and set it aside for now. Heat some olive oil in your Instant Pot on the sauté setting. Toss in the shallot and cook it, stirring for about a minute and a half until it softens. Then add the garlic, lemon zest, red pepper flakes, salt, and pepper. Keep stirring for another minute and a half until the garlic smells amazing. Pour this mixture over the shrimp, stir in the lemon juice, and pop it in the fridge while you cook the orzo.
Step 2
Wipe out the pot and turn the sauté function back on. Melt the butter, then add the orzo, stirring so every grain gets coated in butter—that should take about a minute and a half. Pour in the shrimp stock and white wine, give it a good stir, and let it come to a boil. Once boiling, lock the lid in place and set the Instant Pot to high pressure for 4 minutes. It will take about 10 to 15 minutes to build pressure.
Step 3
When the timer's up, carefully do a quick release to let out the steam, then open the lid. Spread the marinated shrimp evenly over the orzo. Lock the lid again, set to high pressure, and cook for just 1 more minute. After it’s done, do another quick release.
Step 4
Serve the dish warm, garnished with fresh parsley and lemon slices for a bright finish. Enjoy!
Why You’ll Love This Recipe

Serving Suggestions
Serve this alongside a crisp green salad or roasted vegetables for a balanced meal. A sprinkle of fresh parsley or a squeeze of lemon juice on top adds brightness and freshness. Garlic bread or a crusty baguette also pairs wonderfully to soak up the sauce.
Storage Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of water or broth to keep the orzo moist. Avoid freezing, as the shrimp can become tough and the texture of the orzo may change.
