Instructions
Step 1
Start by rinsing the rice a few times until the water runs clear, then soak it in a bowl of water for anywhere between 15 minutes to an hour at room temperature. When ready, drain it well.
Step 2
Next, put the red lentils and 3 cups of water into a large pot and bring it to a gentle simmer over medium heat. You might see some foam rise to the top — skim that off as it appears. Once that’s done, stir in the chopped onion along with the cumin, coriander, salt, black pepper, cayenne, and turmeric. Turn the heat down to low, cover the pot partially, and let it simmer until the lentils start to get tender, about 30 minutes.
Step 3
Add the broccoli, tomatoes, peas, and a bit more salt to the pot, stirring occasionally. Keep cooking until the lentils are really soft and everything is well combined — this will take another 30 minutes or so.
Step 4
While the lentils finish cooking, place the drained rice in another pot with 1 1/2 cups of water. Bring it to a boil, then lower the heat to the gentlest simmer you can manage. Cover it tightly and let it cook until the rice is tender and the water has been absorbed, about 20 minutes.
Step 5
In a small pan, heat the oil over medium heat. Toss in the mushrooms, ginger, and garlic, cooking and stirring until they’re fragrant and starting to soften, which should take about 3 to 5 minutes. Pour this mixture over the lentils and give everything a good stir. Let it all cook together for another 5 minutes so the flavors meld nicely.
Step 6
Serve the lentils hot alongside the fluffy rice and enjoy!
